Fetta, Pumpkin & Pine Nut Salad

With Feta Juli-Etta’s Honey Balsamic Dressing

A fresh, vibrant salad perfect for entertaining or a light lunch. Creamy Fetta Juli-Etta, sweet roasted pumpkin, and toasted pine nuts bring the perfect balance of flavour and texture—finished with our signature Honey Balsamic dressing.

Ingredients (Serves 4):

  • 2 cups baby spinach leaves
  • 2 cups chopped cos or mixed lettuce
  • 2 cups roasted pumpkin, diced (butternut or Jap works well)
  • 100g Fetta Juli-Etta (Garlic & Herb or Chilli works beautifully)
  • ¼ cup pine nuts, lightly toasted
  • Optional: a few olives or sliced red onion for extra zing

For the Dressing:

  • 3 tbsp Feta Juli-Etta’s Honey Balsamic Dressing (or make your own: 2 tbsp balsamic vinegar, 1 tbsp honey, 3 tbsp olive oil, pinch of salt)

Instructions:

  1. Roast diced pumpkin in a hot oven (200°C) with a drizzle of olive oil until golden and tender (about 25 minutes). Let cool slightly.
  2. In a large bowl or platter, layer spinach, lettuce, and roasted pumpkin.
  3. Add generous chunks of Fetta Juli-Etta across the salad.
  4. Sprinkle over toasted pine nuts.
  5. Drizzle with Honey Balsamic Dressing just before serving.
